Zesty Breakfast Burritos
I just made some of these for breakfast and they were really good!
- 3 eggs (may use 5 egg whites as healthier alternative)
- 2 slices cheddar cheese
- 3-4 Tbs salsa
- 2 whole wheat tortillas
Mix eggs and cheese together and pour into hot pan. Scramble egg and cheese mixture until almost done. Add salsa, and continue cooking until excess liquid is gone. Divide egg mixture between the tortillas and fold into a burrito. Enjoy!
Polenta
Posted by JasonQ in Breakfast, Side Dishes on June 13th, 2009
I got this recipe years ago from here. This is very adaptable recipe. Add sugar or maple syrup to make breakfast, or your choice of cheese and/or herbs for a more savory dinner side dish.
- 1½ cup cornmeal
- 1½ cup milk
- 1½ cup water
- 3/4 tsp. salt
- 3 tablespoons butter
Boil all ingredients, except cornmeal. Remove from heat and gradually add cornmeal continually stirring. Cook over medium-low heat until it thickens. Serve warm. Add more sugar or milk if desired. This may be served as breakfast.
