Cinnamon Roasted Sweet Potatoes

  • 2 tablespoons honey
  • 2 tablespoons grapeseed or canola oil
  • 6 medium sweet potatoes, unpeeled, halved lengthwise
  • salt and freshly ground black pepper
  • 6 cinnamon sticks

Preheat the oven to 375.

In a small bowl, whisk together the honey and oil. Rub the potato halves with this mixture and season with salt and pepper. Arrange, skin side down, in a shallow baking dish and bake for about 20 minutes, or until the potatoes begin to soften.

Remove the pan from the oven and turn the sweet potatoes skin side up. Tuck the cinnamon sticks under the potatoes. Roast for 20 to 30 minutes longer or until the potatoes are cooked through and the cinnamon sticks are slightly browned.

Serve the sweet potatoes on a round platter with the browned cinnamon sticks bunched together and standing upright in the center of the platter.

Crunchy Pecan-Apple Pie

  • 3 Tbsp butter, divided
  • 3 Granny Smith apples, peeled, sliced thinly
  • 2 Golden Delicious apples, peed, sliced thinly
  • 4 cups Post Selects Great Grains, Raisins, Date, & Pecans cereal, divided
  • 1/2 cup sugar
  • 1 tsp ground cinnamon
  • 1 9″ frozen deep-dish pie crust, thawed

Preheat oven to 350F.  Melt 1 Tbsp butter in a large skillet on medium heat.  Add apples; toss to coat.  Cover with lid;cook 6-8 min or until apples are tender, stirring frequently.  Add 2 cups of the cereal, sugar, and cinnamon to apples; mix lightly.  Spoon into pie crust, leveling top with back of spoon.  Cover with remaining 2 cups cereal.  Melt remaining 2 Tbsp butter, drizzle over cereal.  Bake 45 min or until crust and top of pie are lightly browned, covering loosely with foil after 30 min.

Couscous with Dates, Cinnamon, and Toasted Almonds

  • 2 Cups Water
  • 1 Cup Milk
  • 1/4 tsp Salt, to taste
  • 1 Cup Couscous
  • 1/4 tsp Cinnamon
  • 8 Dates, pitted and chopped
  • 1/4 Cup Toasted Almonds
  • Butter, Milk, Yogurt, and/or Honey to garnish

Combine the water and milk in a saucepan with the salt and bring to a boil.
Stir in the couscous, cinnamon, and dates.  Stir for 30 seconds, and remove from heat.  Cover and let stand until liquid is absorbed, about 5 minutes.
Mix in nuts, and any other garnishes you wish.  Serve.

Cinnamon Apple Pork Tenderloin

Fall is almost here, so I thought I would start looking for some good seasonal recipes.  I found this delicious looking recipe at About.com.

  • 1 to 1 1/2 pounds pork tenderloin
  • 2 tablespoons cornstarch
  • 1 teaspoon ground cinnamon
  • 2 tablespoons brown sugar, packed
  • 2 cooking apples, peeled, cored and sliced
  • 2 tablespoons dried cranberries or raisins

Preheat the oven to 400°. Place the pork tenderloin in a roasting pan or casserole dish. Combine the remaining ingredients in a bowl and stir. Spoon the apple mixture around the pork tenderloin. Cover and bake 30 minutes. Remove the lid and spoon the apple mixture over the tenderloin. Return to the oven and bake 15 to 20 minutes longer, or until pork tenderloin is browned and cooked through. A meat thermometer in the center should register at least 150° to 160°.
Serves 4.
