Crock Pot Stuffed Pepper Soup

  • 1 large can V8 juice
  • 1 box Zatarains cajun rice mix
  • 2-3 lbs lean ground beef
  • 1 large vidalia onion, diced
  • 4 large green peppers, cut into 1 inch strips
  • 1/4 tsp celery salt
  • salt and pepper to taste

Cook onions, rice mix and ground beef together in a skillet until onions are tender and the beef is done, stirring frequently.

Drain excess grease and put mixture into a crock pot.  Add green peppers, V8 juice, celery salt, and salt and pepper.

Cook on low 6-8 hours.

Any soup or stew vegetables may be added for a heartier soup.

Pumpkin Soup with Curry Powder

  • 3 tablespoons butter
  • 1 medium sweet onion, chopped
  • 4 medium carrots, chopped
  • 3 medium ribs celery, chopped
  • 1 clove garlic, minced
  • 1 1/2 cups vegetable broth
  • 1 1/2 teaspoons curry powder, or to taste
  • 1/2 teaspoon salt, or to taste
  • Dash fresh ground black pepper
  • 2 tablespoons fresh parsley, or 2 teaspoons parsley flakes
  • 3 cups mashed pumpkin, fresh if possible
  • 2 cups half-and-half or 1 1/2 cups milk and 1/2 cup heavy cream
  • Parsley or chives, for garnish, optional

In a large saucepan melt butter over medium-low heat. Add chopped vegetables and saute until just tender. Add garlic and vegetable broth; bring to a simmer. Cover and simmer for 20 minutes. Add 1 1/2 teaspoons curry powder and 1/2 teaspoon salt, along with the pepper, parsley, and pumpkin. Stir in half and half or milk and cream until well blended. Working with batches, blend until smooth and pour back into the saucepan. Heat through; taste and add more salt and curry powder as needed. Garnish with parsley or snipped chives.

Taco Soup

This has been a favorite in my family for many years.

  • 2 lbs Ground Beef
  • 1 onion, diced
  • 2 cans stewed tomatoes
  • 1 can Ro-tel tomatoes
  • 1 can ranch style beans (kidney beans)
  • 1 can pinto beans
  • 1 can whole kernel corn
  • 1 can hominy
  • 2 cups water
  • 1 pack taco seasoning
  • 1 pack hidden valley ranch dressing (dry kind)

Brown ground beef with onion. Drain. Add all ingredients to a pot. Do not drain vegetables! Cook on medium heat for 30-45 min.

Top your bowl of soup with Fritos, shredded cheese, sour cream, or your favorite taco toppers!
